Carrot cake is an absolute classic, but that doesn't stop it from being one of our (many) favourites here at Berkson Bakes. Our version is packed with freshly grated carrot, providing a beautifully moist sponge, and pieces of walnut scattered throughout give a pleasing crunch. [These can be replaced with glacé ginger for a nut-free version.] A carrot cake wouldn't be complete without a generous dose of cinnamon, so rest assured that's in there too. The two layers of sponge are sandwiched together and topped with possibly the creamiest cream cheese icing you might ever taste, then decorated with walnut pieces. Winner winner, carrot cake for dinner!
Grated carrots, sunflower oil, gluten-free flour blend (rice, potato, tapioca; xanthan gum), free-range whole eggs, caster sugar, walnuts, ground cinnamon, gluten-free baking powder (raising agents sodium dihydrogen diphosphate and sodium hydrogen carbonate, rice flour), bicarbonate of soda, salt.
Cream cheese (milk), icing sugar, salted butter (milk), lemon juice.
