When it comes to vegan banana cake, you might well think of a slightly uninspiring loaf, but this one takes things to a whole new level! Two layers of extremely squidgy banana sponge are sandwiched together with frosting (we favour our peanut butter frosting for the ultimate in delicious combinations), and decorated with crunchy banana chips, creating what could quite possibly become your new favourite cake, and we don't say these things lightly.

Fairtrade bananas, gluten-free self-raising flour blend (rice, potato, tapioca, maize, buckwheat; raising agents: mono-calcium phosphate, sodium bicarbonate; xanthan gum), Fairtrade brown sugar, sunflower oil, bicarbonate of soda, salt.

Vegetable margarine (vegetable oils (rapeseed, sustainable palm, sunflower), water, salt, emulsifiers: lecithin, mono and diglycerides of fatty acids, acid: lactic acid, colours: beta-carotene, vitamins A and D, flavourings), icing sugar, smooth peanut butter (peanuts, salt), salt.

Dried banana chips (bananas, coconut oil, sugar), Fairtrade demerara sugar.
