If you're vegan and love carrot cake, we have just the thing for you with this slightly tropical version! Alongside plenty of grated carrots and pieces of walnut, that you would expect to find, we also add pineapple juice and desiccated coconut into the sponge to jazz things up a bit.

Grated carrot, gluten-free flour blend (rice, potato, tapioca; xanthan gum), pineapple juice, sunflower oil, caster sugar, walnuts, maple syrup, desiccated coconut, glacé ginger (ginger, sugar, preservative: sulphur dioxide), ground cinnamon, gluten-free baking powder (raising agents sodium dihydrogen diphosphate and sodium hydrogen carbonate, rice flour), bicarbonate of soda, ground nutmeg, salt.

Icing sugar, desiccated coconut, vegetable margarine (vegetable oils (rapeseed, sustainable palm, sunflower), water, salt, emulsifier: mono and diglycerides of fatty acids, citric acid, vitamins A and D, flavourings), coconut milk (coconut extract, water, stabilizers: guar gum, xanthan gum, emulsifier: polysorbate 60).
