If you're a fan of good old banana bread, you're sure to love this extra special version. It's packed full of both dried and fresh fruit, with plenty of pecans for a great textural contrast. To help you feel like you're in the Caribbean, under the shade of a banana tree, we add in a generous splash of rum and ground allspice. A slice or two of this cake is just what you need on a rainy English afternoon.
Ingredients:
Dried dates (dates, sunflower oil), raisins (raisins, sunflower oil), sultanas (sultanas, sunflower oil), bananas, pecans, cornmeal polenta, free-range egg whites, dark rum, gluten-free baking powder (raising agents sodium dihydrogen diphosphate and sodium hydrogen carbonate, rice flour), ground allspice; banana chips (bananas, coconut oil, sugar).

I've only been GF for a small part of my life but have always found it hard to find yummy treats that taste good. However I was lucky enough to meet the woman behind these bakes and was treated to an entire cake made by her for a party and I can honestly say it's the most delicious cake I've EVER eaten. That includes any cake I'd had before my GF days! Chocolate & walnut cake..it's the best.
